This recipe came from my Mother-in-Law, Marion. It is the one and only Whoopie Pie my husband and his family likes. They say that these are the BEST!

Ingredients

  • WHOOPIE PIES
  • 2 cups flour, unsifted
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup cocoa powder
  • 1 cup sugar
  • 1 - egg
  • 1/3 cup cooking oil
  • 1 teaspoon vanilla extract
  • 3/4 cup milk
  • FILLING ***SEE NOTES BELOW FOR YIELD
  • 1 stick margarine
  • 1 cup confectioners' sugar
  • 3 heaping tablespoons marshmallow fluff
  • 1 teaspoon vanilla extract
  • FROSTING
  • 1 - chocolate, unsweetened squares
  • 1 1/2 tablespoons margarine
  • 1 cup confectioners' sugar
  • 2 ounces milk, warm for consistency

How To Make chocolate frosted whoopie pies

  • Step 1
    MIX TOGETHER DRY INGREDIENTS: flour, baking soda, salt, cocoa powder & sugar THEN ADD: egg, cooking oil, vanilla & milk Beat together just until blended.
  • Step 2
    Drop by tablespoon onto a cookie sheet (greased or lined with parchment paper). Leave room for spreading. Bake 12 minutes in 350 degree oven until edges are slightly firm. Let stand for 5 minutes before transferring to cooling rack.
  • Step 3
    Using a mixer on medium-low speed, combine the ingredients for the filling. Spread the filling between two cookies. ***This mixture makes just enough filling to put a small amount on each pie. If you prefer to use more, you may wish to increase it the portions by 1/2 each.
  • Step 4
    FROSTING: In a saucepan, stir chocolate and margarine over low heat until melted. Gradually add confectioners' sugar and warm milk creating a thin frosting (like a glaze). Spread the glaze on top of the whoopie pies and let cool.
