1MIX TOGETHER DRY INGREDIENTS:
flour, baking soda, salt, cocoa powder & sugar
egg, cooking oil, vanilla & milk
Beat together just until blended.
2Drop by tablespoon onto a cookie sheet (greased or lined with parchment paper). Leave room for spreading. Bake 12 minutes in 350 degree oven until edges are slightly firm. Let stand for 5 minutes before transferring to cooling rack.
3Using a mixer on medium-low speed, combine the ingredients for the filling.
Spread the filling between two cookies.
***This mixture makes just enough filling to put a small amount on each pie. If you prefer to use more, you may wish to increase it the portions by 1/2 each.
In a saucepan, stir chocolate and margarine over low heat until melted. Gradually add confectioners' sugar and warm milk creating a thin frosting (like a glaze). Spread the glaze on top of the whoopie pies and let cool.
