Ingredients

  • FILLING:

  • 1 pkg
    (8 oz) cream cheese
  • 1 large
    egg
  • 2 Tbsp
    sugar
  • 1/2 tsp
    salt
  • 1/2 tsp
    vanilla extract
  • 1/4 c
    mini semi-sweet chocolate chips
  • CUPCAKES:

  • 1 c
    all purpose flour
  • 3 Tbsp
    sifted unsweetened cocoa powder
  • 3/4 tsp
    baking powder
  • 1/2 tsp
    kosher salt
  • 1/8 tsp
    baking soda
  • 3/4 c
    plus 2 tablespoons sugar
  • 1/2 c
    (1 stick) unsalted butter, room temp.
  • 2 large
    eggs
  • 1 tsp
    vanilla extract
  • 3 oz
    bittersweet chocolate, chopped, melted, warm
  • 1/2 c
    whole milk

How to Make Chocolate Cream Cheese Cupcakes

Step-by-Step

  1. For Filling:

    Using electric mixer, beat cream cheese in medium bowl. Add egg, sugar, salt and vanilla and beat until almost smooth. Fold in chocolate chips.
  2. For Cupcakes:

    Pre-heat oven to 350 degrees. Line standard muffin tin with 12 paper liners.

    In a medium bowl, mix flour, cocoa powder, baking powder, kosher salt and baking soda.

    Using electric mixer, beat sugar and butter in a large bowl until fluffy. Beat in eggs. Stir in vanilla extract and chocolate, beat at high speed 5 seconds. Beat in flour mixture alternately with milk. Beat on high for 5 seconds to blend.
  3. Divide batter among cups, filling 1/3 full. Using a tablespoon, hollow out center of each cupcake. Place 1 heaping tablespoon of cream cheese filling in each center.
  4. Bake cupcakes until toothpick inserted into center (but not into cream cheese filling) comes out clean, about 20 minutes. Cool for 10 minutes in pan. Remove from pan, cool completely on rack.
