My baked version of a chocolate covered strawberry.

Ingredients

  • 1 package yellow cake mix
  • 3 ounces pkg. strawberry jello
  • 3 tablespoons flour
  • 1 cup oil
  • 1/2 cup cold water
  • 4 - eggs
  • 1 package fresh strawberry's, chopped
  • 1/2 cup heavy creme
  • 8 ounces semi sweet chocolate chips

How To Make chocolate covered strawberry cupcakes

  • Step 1
    Preheat oven to 350 degrees Mix first seven ingredients together, using only half the fresh strawberry's in the batter. Mix well and scoop into cupcake cups, do not overfill. Bake for 20-25 minutes. Use a toothpick to check the center of a cupcake to make sure they are done.
  • Step 2
    Once cupcakes have cooled add heavy cream and chips to a bowl and using 30-40 second intervals melt the mixture in the microwave in a microwave safe bowl. Stir after each set until melted and creamy. Dip the tops of the cupcakes in the ganache and garnish with a strawberry quarter. Enjoy!
