How to Make Chocolate Covered Strawberry Cupcakes
- Cupcakes
In large batter bowl combine cake mix, flour and pudding mix.
Add rest of ingredients and beat well. Pour into lined cupcake pans and bake for 20-25 minutes. Mine took 21. Cool completely. - Filling - You can make this any flavor just change the flavor of pudding.
Mix pudding mix with milk, beat until slightly thickened. Make sure the cream cheese is room temp & VERY soft. Beat into pudding until we'll combined. Fold in whipped topping. Put in fridge until you 're ready for it. I sometimes make it the night before.
Put in pipping bag with filling tip or round tip will do also. Push tip into cupcake and squeeze filling into cupcake until top starts to rise slightly. - Strawberry Buttercream
Make sure the butter is room temp. The softer it is the easier it is to get creamy. Put in bowl of mixer with the paddle. Beat butter for a couple minutes, add powdered sugar and beat on low unless you like a cloud of sugar around you.(been there done that) mix on low until the butter absorbs the sugar & looks crumbled. Add vanilla, jam, food coloring and cream beat until creamy adding cream a little at a time until spreading consistency. - Chocolate Buttercream
