chocolate cookie sheet cake

A man that I used to work with brought this for a potluck...lol...I believe it was his wife that did the cooking...this cake was delicious. It is made in a cookie sheet pan, is simple but packed with flavor. The one we had did not have nuts but the peanut butter instead. Great for a crowd.

Ingredients

  • 2 cups all purpose flour
  • 2 cups sugar
  • 1/2 teaspoon salt
  • 1 stick oleo
  • 1 cup water, cold
  • 1/2 cup shortening
  • 3 tablespoons cocoa powder
  • 2 - eggs, beaten
  • 1 teaspoon baking soda
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • ICING:
  • 1 stick oleo
  • 3 tablespoons cocoa powder
  • 1 box powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup nuts, optional or
  • 1/3 cup peanut butter, crunchy
  • 6 tablespoons milk
  • pinch salt

How To Make chocolate cookie sheet cake

  • Step 1
    Sift together flour, sugar, salt. In a saucepan put oleo, water, shortening & cocoa. Bring to a boil & pour over flour mixture. Mix well. Add eggs. Add baking soda, buttermilk & vanilla. Stir Well. Bake in greased & floured cookie sheet (15 1/2 x 10 1/2 x 1) in 350 degree oven for 20-25 minutes. Start making icing during last 5 minutes.
  • Step 2
    ICING: Using same saucepan melt oleo, cocoa, peanut butter but do NOT boil. Take off heat & add powdered sugar, vanilla, nuts if desired & milk. Ice cake hot. Makes 35 squares.
