chocolate chip oatmeal cake

I have a favorite cookbook that is literally falling apart..pages coming loose, pages even have splatters of batter on them. This cookbook is from the 70's and is my old stand by..one that I go to and know something good is going to come out of it when baked. This is a great little recipe I made the first time for my daughters 6th grade class in the 70's...great little find, it is brownie-like yet a cake...really a moist and delicious treat. Teacher called them brownies and wanted the recipe, so I let her think they were brownies. Brings back memories of my young Mommy days!!

Ingredients

  • 1 cup oatmeal
  • 1 1/2 cups semi sweet chocolate chips (1/2 cup goes in batter, 1 cup is for sprinkling on top)
  • 1 1/2 cups boiling water
  • 1/2 cup shortening
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 tablespoon vanilla extract (yes, one tablespoon)
  • 2 - eggs
  • 1 tablespoon cocoa powder (hershey's)
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup walnuts, chopped

How To Make chocolate chip oatmeal cake

  • Step 1
    Preheat oven to 350 F.
  • Step 2
    Stir together 1/2 cup chocolate chips, oatmeal, boiling water; let stand 10 minutes. Cream shortening, sugars, vanilla, eggs one at a time; beat well. Sift together cocoa, flour, soda, and salt. Combine with cream mixture; add chocolate mixture. Spread into a greased 9X13 cake pan. Over this sprinkle an additional 1 cup of chocolate chips and 1/2 cup chopped walnuts.

    Bake for 35-40 minutes or until done. Cool and serve with a scoop of Vanilla Ice cream with whipping cream, if desired. OH, and don't forget the Cherry on top!!! (wink)
