chocolate chip date nut cake

This is an old recipe that I can remember showing up at every picnic! As a kid I never appreciated this cake. I wanted gobs of sweet frosting on a cake! Now I love this cake and will make it for Jim and I when we go fishing or just because we like it!

Ingredients

  • 1 cup dates, chopped
  • 1 teaspoon baking soda
  • 1 cup boiling water
  • 1 cup shortening
  • 1 cup sugar
  • 2 - eggs
  • 1 3/4 cups flour
  • 1 heaping tablespoon cocoa powder
  • 1 teaspoon salt
  • - sprinkle on top:
  • - chocolate chips
  • - chopped nuts
  • - brown sugar

How To Make chocolate chip date nut cake

  • Step 1
    Preheat oven to 325 degrees. Grease and flour a 13x9 inch cake pan.
  • Step 2
    Combine dates, baking soda and boiling water. Let cool.
  • Step 3
    Cream shortening and sugar. Add eggs and beat until fluffy.
  • Step 4
    Stir in cocoa, flour and salt. Mix in cooled date mixture.
  • Step 5
    Pour into prepared pan. Sprinkle with nuts, chocolate chips and brown sugar.
  • Step 6
    We never measured the topping mixture. I always liked more on top than my mother did. Use about 1/3 brown sugar, 1/3 cup chocolate chips (semi sweet or milk chocolate), 1/3 cup nuts. If you feel you want more on top ~ go for it!
  • Step 7
    Bake for 40 minutes. Let cool.
