This is an old recipe that I can remember showing up at every picnic! As a kid I never appreciated this cake. I wanted gobs of sweet frosting on a cake!
Now I love this cake and will make it for Jim and I when we go fishing or just because we like it!

Ingredients

  • 1 c
    dates, chopped
  • 1 tsp
    baking soda
  • 1 c
    boiling water
  • 1 c
    shortening
  • 1 c
    sugar
  • 2
    eggs
  • 1 3/4 c
    flour
  • 1 heaping Tbsp
    cocoa powder
  • 1 tsp
    salt
  • ·
    sprinkle on top:
  • ·
    chocolate chips
  • ·
    chopped nuts
  • ·
    brown sugar

How to Make CHOCOLATE CHIP DATE NUT CAKE

Step-by-Step

  1. Preheat oven to 325 degrees. Grease and flour a 13x9 inch cake pan.
  2. Combine dates, baking soda and boiling water. Let cool.
  3. Cream shortening and sugar. Add eggs and beat until fluffy.
  4. Stir in cocoa, flour and salt. Mix in cooled date mixture.
  5. Pour into prepared pan. Sprinkle with nuts, chocolate chips and brown sugar.
  6. We never measured the topping mixture. I always liked more on top than my mother did. Use about 1/3 brown sugar, 1/3 cup chocolate chips (semi sweet or milk chocolate), 1/3 cup nuts. If you feel you want more on top ~ go for it!
  7. Bake for 40 minutes. Let cool.
