chocolate chip banana nut bundt cake

I am a sucker for anything with bananas, nuts and chocolate: cakes, breads, ice creams..., making this recipe one of my favorites. It's important to use VERY ripe bananas to get the very best flavor!

Ingredients

  • CAKE BATTER
  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 1 1/2 cups (or approximately 3) very ripe bananas, smashed
  • 2 - large eggs
  • 1/2 cup sour cream
  • 1 tablespoon vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup chopped pecans (or nuts of your preference)
  • 3/4 cup mini chocolate chips
  • - powdered sugar for dusting

How To Make chocolate chip banana nut bundt cake

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    In large bowl, cream shortening and sugar. Add bananas, eggs, sour cream and vanilla. Mix well.
  • Step 3
    In small bowl combine flour, baking soda and salt. Add to banana mixture and combine well. Fold in nuts and mini chocolate chips.
  • Step 4
    Spray bundt pan with non-stick spray. Pour cake batter into pan and bake on middle rack for 45-50 minutes, until wooden pick inserted in middle comes out clean.
  • Step 5
    Cool in pan on wire rack for 10 minutes. Run sharp knife along edges of cake; invert onto pan and cool completely.
  • Step 6
    Once cooled, glaze or dust with powdered sugar.
