My second oldest asked for this for his birthday and homemade M&M and English Toffee Tapioca Ice Cream. Of course, I whipped up one on the double. It is made with homemade cream cheese frosting. I ordered a edible fondant Pokemon image as well for $3. He just loved his cake! We did too.

Ingredients

  • CHOCOLATE CHIP BANANA CAKE
  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 3/4 cup dark brown sugar
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3-4 - overripe bananas
  • 4 tablespoons precreamed shortening
  • 1 tablespoon vegetable oil
  • 2 - eggs
  • 1 tablespoon vanilla
  • 1 tablespoon cinnamon
  • 1/2 cup dark chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup confetti sprinkles
  • CREAM CHEESE FROSTING
  • 1 stick butter
  • 2 packages cream cheese
  • 1/2 cup precreamed shortening
  • 1 cup confectioners' sugar
  • 1 tablespoon vanilla
  • 1/2 teaspoon banana extract
  • 1 pinch cinnamon
  • - food coloring (optional)

How To Make chocolate chip banana birthday cake

  • Step 1
    Combine dry ingredients for cake in a large mixing bowl, save chocolate and sprinkles.
  • Step 2
    In a smaller mixing bowl, add all wet cake ingredients including bananas. Beat well for 3 minutes.
  • Step 3
    Then add mix to dry ingredients. Beat for an additional 3 minutes.
  • Step 4
    Fold in chips and sprinkles.
  • Step 5
    Pour into either two circular baking pans or one large one was I did. Prespray with Baker's Joy.
  • Step 6
    Bake at 325F for approximately 50 minutes or when a toothpick comes out dry when piercing the center.
  • Step 7
    Wait 15 minutes before inverting cake onto desire serving plate. Then allow to cool totally.
  • Step 8
    To make frosting, just place all the ingredients in a mixing bowl (save food coloring) and beat for 2 minutes.
  • Step 9
    If you are adding separate color frosting, scoop out a large spoonful into separate dishes and whip with desired food coloring choice. Add to a piping bag and decorate.
