Ingredients

  • 8.5 ounces chocolate wafer cookies
  • 2 tablespoons butter, unsalted and melted
  • FILLING INGREDIENTS
  • 1 tablespoon butter
  • 3 ounces chocolate, unsweetened
  • 9 ounces semi-sweet chocolate
  • 12 ounces cream cheese, softened
  • 2 tablespoons vanilla extract
  • 1 cup whipping cream
  • 6 - eggs
  • 1/2 cup sugar
  • - whipped cream, optional

How To Make chocolate cheesecake with chocolate wafer crust

  • Step 1
    To make crust, crush wafers; add melted butter to make crumbly dough.
  • Step 2
    Press into bottom of 9-inch springform pan; set aside.
  • Step 3
    To make filling, melt butter in top of double boiler over hot water; add chocolates and heat until melted, stirring until smooth.
  • Step 4
    Beat cheese until creamy; add vanilla and whipping cream.
  • Step 5
    Stir in chocolate mixture; beat eggs with sugar and slowly beat into chocolate mixture.
  • Step 6
    Turn into crust and bake at 350 40 to 45 minutes, or until cake puffs slightly in center; cool, then chill thoroughly before unmolding - Serve with whipped cream, if desired.
