So moist that you don't have to frost it. I also won at the county fair with this cake. You can also replace carrots with apple pie filling.

Ingredients
- 2 cups sifted, flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 1/2 cups sugar
- 1 cup butter, softened
- 4 - egg yolks
- 1 cup cooled, cooked mashed carrots
- 5 teaspoons cocoa powder
- 1/2 cup milk
- 1/2 cup raisins
- 1/2 cup chopped,walnuts
- 4 - egg whites
How To Make chocolate carrot cake

Step 1Combine in bowl sugar, butter, beat until well blended. Add 4 egg yolks, beat till light.

Step 2Beat in mashed carrots, cocoa, add flour, baking powder, salt, cinnamon and nutmeg. Alternately with milk. Blending well after each addition.

Step 3Stir in raisins, nuts. Beat the egg whites until stiff, glossy peaks form. Fold into chocolate mixture a d blend. Pour into greased 10-inch tube or bundt pan.

Step 4Bake at 350 degrees for 65 to 70 minutes. Let cool right side up before removing from pan.
