Ingredients
- 2/3 cup vegetable oil
- 3/4 cup sugar
- 1/2 cup brown sugar
- 2 teaspoons vanilla
- 1 large egg
- 1 large egg yolk
- 2/3 cup buttermilk
- 11/4 cups flour
- 1/4 cup cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 cups raspberries, blueberries, strawberries
- HALVE STRAWBERRIES. CHERRIES MAY BE ADDED AS WELL.
How To Make chocolate berry snack cake

Step 1Preheat oven to 350 degrees.

Step 2Spray 8x8x2" pan with cooking spray. Line with parchment paper.

Step 3In a large bowl, whisk the oil, sugars and vanilla.

Step 4Add the egg, and then the egg yolk, whisking after each.

Step 5Whisk in the buttermilk.

Step 6Sift in flour, baking powder and cocoa powder. Fold in until combined.

Step 7Fold in half the berries.

Step 8Pour batter into the prepared pan.

Step 9Sprinkle the top of the cake with the remaining berries.

Step 10Bake 40 minutes, rotating the pan after 20 minutes.

Step 11Let cake cool before serving.

Step 13If you are not a fan of chocolate use 1 1/2 cups flour and no cocoa powder. Sprinkle the top with 2 tablespoons raw sugar.
