I married into a family of great cooks and one being my husbands Grandmother. She was only about 4' tall, don't know how she reached the counters. This cake was her legand. I have never successfully made it like "Grandmother" and probably never will. Grandmother has passed and her cake has only appeared one time since. My husbands sister n law can master Grandmother's cake. I will keep trying. One day maybe I can come close to bringing back her legand.

Ingredients
- 2 1/4 cups self rising flour
- 2/3 cup shortening
- 1 1/2 cups sugar
- 2 large eggs
- 1/4 cup cocoa powder
- 1 teaspoon vanilla
- 1 cup banana (two large)
- 1/2 cup buttermilk

Step 1Crean shortening with sugar until fluffy. Add eggs one at a time to the sugar mixture beating thoroughly after each is added. Add chocolate to the sugar/egg mixture and mix well. Stir in Vanilla. Add flour along with the bananas and buttermilk. Bake at 350 degrees for 30-35 minutes for 2 8" round cake pans.

Step 2Creamy Mocha Frosting 1/2 cups margarine 1/3 cups cocoa 4 cups sifted XXX sugar 1/3 cups strong HOT coffee dash of salt Cream margarine, add 2 cups XXX sugar and salt. Blend cocoa and coffee together. Add to the margarine mixture. Beat Well. Add remainder of XXX sugar and beat until fluffy.
