- 8 ounces mascarpone cheese
- 4 cups cold heavy cream
- 2 tablespoons sugar
- 2 tablespoons whiskey (optional)

Step 1whisk 3 cups heavy cream and mascarone cheese in a chilled bowl until soft peaks form add sugar and whiskey. whisk until soft peaks form refrigerate until ready to use up to 3 hrs.

Step 2arrange 9 cookies in a circle with cookies touching on a cake stand or plate. Place 2 cookies in the center carfully spread 1 cup cream mixture leave slight border. repeat 7 times ending with cookies refri lightly draped with plastic wrap overnite. whisk remaining cup cream until soft peaks form. spread over top of cake just before serving- garnish with shavings or mini chips
