Chianti Chocolate Cake

This is a special family "dessert cake". The Chianti wine really adds a special taste and enhances the chocolate flavor even more. It almost has a mousse-like texture and really melts in your mouth!   • 1/2 c
    chianti (or a good red) wine
  • 4
    cloves soaked in the wine for half an hour
  • 1/2 c
    very soft butter
  • 1/2 c
  • 2
    eggs, divided
  • 1/2 tsp
  • 1 tsp
    vanilla extract
  • 2 Tbsp
    unsweetened cocoa
  • 2 and 1/2 oz
    finely chopped dark chocolate
  • 1 and 1/4 c
    sifted all purpose or cake flour
  • 2 tsp
    baking powder
  • 1 c
    whipped cream or topping
  • 1/2 c
    powdered sugar
  • 1 c
    cherries in syrup

How to Make Chianti Chocolate Cake


  1. Whip egg whites with a pinch of salt and set aside.
  2. Without changing beaters, beat the butter and sugar until fluffy.
  3. Beat in the yolks one at a time until creamy and light.
  4. Beat in the cinnamon and cocoa.
  5. Mix in the wine (with the cloves strained out and discarded)
  6. Gradually add the flour sifted with the baking powder and mix in by hand until smooth. (or low speed with mixer)
  7. Gradually fold in the beaten egg whites, 1/3 at a time.
  8. Very gently fold in the chopped chocolate.
  9. Pour into a buttered and parchment lined 8 inch round cake pan. (best with removable sides). Level top.
  10. Bake in a preheated 325 degree oven for 45 - 50 minutes.
    Top should be firm and toothpick inserted in the center should come out clean.
  11. Remove from oven and cool in the pan for 10 minutes before removing from the pan and transferring to a cooling rack. (gently peel off the wax paper)
  12. When cold, sift powdered sugar over the top and serve with the whipping cream. Top with the cherries in syrup if desired.
