This is a special family "dessert cake". The Chianti wine really adds a special taste and enhances the chocolate flavor even more. It almost has a mousse-like texture and really melts in your mouth! For more of my family (Italian and American) recipes, visit my blog: cookingfromminneapolistomilan.

Ingredients

  • 1/2 cup chianti (or a good red) wine
  • 4 - cloves soaked in the wine for half an hour
  • 1/2 cup very soft butter
  • 1/2 cup sugar
  • 2 - eggs, divided
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsweetened cocoa
  • 2 and 1/2 ounces finely chopped dark chocolate
  • 1 and 1/4 cups sifted all purpose or cake flour
  • 2 teaspoons baking powder
  • 1 cup whipped cream or topping
  • 1/2 cup powdered sugar
  • 1 cup cherries in syrup

How To Make chianti chocolate cake

  • Step 1
    Whip egg whites with a pinch of salt and set aside.
  • Step 2
    Without changing beaters, beat the butter and sugar until fluffy.
  • Step 3
    Beat in the yolks one at a time until creamy and light.
  • Step 4
    Beat in the cinnamon and cocoa.
  • Step 5
    Mix in the wine (with the cloves strained out and discarded)
  • Step 6
    Gradually add the flour sifted with the baking powder and mix in by hand until smooth. (or low speed with mixer)
  • Step 7
    Gradually fold in the beaten egg whites, 1/3 at a time.
  • Step 8
    Very gently fold in the chopped chocolate.
  • Step 9
    Pour into a buttered and parchment lined 8 inch round cake pan. (best with removable sides). Level top.
  • Step 10
    Bake in a preheated 325 degree oven for 45 - 50 minutes. Top should be firm and toothpick inserted in the center should come out clean.
  • Step 11
    Remove from oven and cool in the pan for 10 minutes before removing from the pan and transferring to a cooling rack. (gently peel off the wax paper)
  • Step 12
    When cold, sift powdered sugar over the top and serve with the whipping cream. Top with the cherries in syrup if desired.
