I got this recipe out of the alumni cookbook of the college I graduated from. I've made it many times over the past 30 years. It's rich but boy is it good. My boys love it topped with ice cream.

2 sticks butter or margarine
1 box brown sugar ( lb.)
1 c. granulated sugar
4 egg yolks
2 c. all purpose flour
2 tsp. baking powder
1/4 tsp salt
1 c. broken nuts
1 1/2 tsp. vanilla extract
4 egg whites

How to Make Chess Cake


  • 1Melt butter; add both sugars and blend well.
  • 2Add egg yolks and beat well.
  • 3Sift flour, baking powder, and salt. Add to creamed mixture.
  • 4Fold in nuts and vanilla.
  • 5Beat egg whites until stiff; fold into creamed mixture.
  • 6Spread batter in greased and floured 9x13 pan.
  • 7Bake at 350 degrees for 30-45 minutes. Sprinkle with powdered sugar.
  • 8This cake is suppose to sink in the center. If overcooked the outside edges will get hard.
