Chess Cake

ginger skaggs

I got this recipe out of the alumni cookbook of the college I graduated from. I've made it many times over the past 30 years. It's rich but boy is it good. My boys love it topped with ice cream.

2 sticks butter or margarine
1 box brown sugar ( lb.)
1 c. granulated sugar
4 egg yolks
2 c. all purpose flour
2 tsp. baking powder
1/4 tsp salt
1 c. broken nuts
1 1/2 tsp. vanilla extract
4 egg whites

1Melt butter; add both sugars and blend well.
2Add egg yolks and beat well.
3Sift flour, baking powder, and salt. Add to creamed mixture.
4Fold in nuts and vanilla.
5Beat egg whites until stiff; fold into creamed mixture.
6Spread batter in greased and floured 9x13 pan.
7Bake at 350 degrees for 30-45 minutes. Sprinkle with powdered sugar.
8This cake is suppose to sink in the center. If overcooked the outside edges will get hard.
