2 1/2 ccanned tart cherries,drained
1/2 cliquid from cherries
2 Tbspquick cooking tapioca
1/4 tspcream of tartar
6 Tbspcake flour
How to Make Cherry puff
- Crush cherries with potato masher.Add cherry liquid,sugar,and tapioca.Simmer for 5 minutes,stirring constantly.
- Beat egg whites until foamy;add salt and cream of tartar;beat stiff.
- Beat egg yolks until thick and lemon colored; add sugar; beat thoroughly. Fold egg yolks into egg whites, then fold in flour.
- Pour cherry mixture into 1 1/2-quart casserole.Pour batter on top. Bake in slow oven ( 325 ) for 40 minutes.Serve warm.
