This is a fruit cake that will not be shoved in the back of the cabinet. Our family use to go to the mall and visit a candy store that sold differnt varieties of candies and dried fruit. My aunt brought what seemed to be tons of dried cherries to put in this cake, and to eat.

Ingredients

  • - ***streusel topping***
  • 1 cup all purpose flour
  • 2/3 cup brown sugar, firmly packed
  • 1/2 cup granulated sugar
  • 1 stick butter, melted
  • 1 teaspoon cinnamon
  • - ****cake****
  • 2 1/2 cups all purpose flour
  • 3 - eggs
  • 1 cup sugar
  • 1/4 cup honey
  • 1/4 cup molasses
  • 1 cup vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon ginger (powder)
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 1 tablespoon vanilla
  • 1 cup buttermilk
  • 1 cup dried cherries
  • 1 cup frozen cherries (thawed & drained)

How To Make cherry pound cake

  • Step 1
    Pre heat your oven to 350 degrees. Next spray a bundt pan and set aside.
  • Step 2
    Make your streusel topping by combinding the flour, brown sugar, granulated sugar, and cinnamon. Stir in the melted butter making sure that everything is coated, mixture will be lumpy. Set aside.
  • Step 3
    In a seperate, large bowl blend together the oil, eggs, sugar, honey,molasses, baking soda, salt, ginger, cinnamon,cloves,and vanilla. Add 1/3 of the flour mixture to the wet ingredients, mix until all the flour is incorporated. Next add half the buttermilk, more flour, the rest of the buttermilk, and finish whith the remainding flour. Stir in all the cheries by hand, gently.
  • Step 4
    Pour the mixture into the bundt pan and sprinkle the streusel on top. Bake at 350 anywhere between 30-40 minutes depending on your oven. Turn the cake onto a wire rack to finish cooling, dust with powdered sugar.
