Mmmmmmm a different version of Rice Krispie Treats!

Ingredients

  • 10 oz packages marshmallows
  • 2 tablespoons butter
  • 2 tablespoons cherry jell-o gelatin mix
  • 3 1/2 cups rice krispies cereal
  • 1 can vanilla frosting
  • 3 pkts - crystallized lime
  • 2 - 3 - red food coloring drops
  • GARNISH:
  • - pink decorating sugar
  • 12 - maraschino cherries, with stem, patted dry

How To Make cherry margarita rice krispie mini cupcakes

  • Step 1
    Coat 12 mini muffin cups with cooking spray.
  • Step 2
    In a large pot, melt 1/2 bag marshmallows (2 1/2 C) & butter over medium low heat, stirring occasionally, until smooth.
  • Step 3
    Stir in jell-o & rice krispies; mix well. NOTE: To avoid mixture of sticking to the spoon or spatula, spray it with cooking spray.
  • Step 4
    Divide mixture amoung the muffin cups, pressing into cups slightly overlapping edges. Set aside to cool.
  • Step 5
    Stir together frosting, lime & food coloring; mix well.
  • Step 6
    Transfer frosting to a pastry bag fitted with a round tip. Pipe onto cups & sprinkle with pink sugar; top with cherry.
