This is the very first coffeecake I made when I was learning to bake! That was over 40 years ago and it still impresses my guests.

Ingredients

CAKE

1 c
sugar
4
eggs
1 c
canola oil
2 c
flour
1 Tbsp
plus 2 teaspoons baking powder
1 tsp
salt
1/2 tsp
almond extract
1 tsp
cinnamon
1 can(s)
cherry pie filling

POWDERED SUGAR GLAZE

1 1/2 c
powdered sugar
2 tsp
lemon juice
1 Tbsp
butter, softened
milk if needed

How to Make Cherry Coffeecake

Step-by-Step

  • 1Cream together the sugar, eggs and oil.
  • 2Add the remaining ingredients and mix well.
  • 3Pour half of the batter into a greased and floured 9x13 pan.
  • 4Put cherry pie filling (or any pie filling you prefer) on top of batter and sprinkle with cinnamon.
  • 5Top with rest of the batter.
  • 6Bake at 350 degrees for 30-40 minutes or until tests done.
  • 7Mix glaze ingredients together until smooth.
  • 8Glaze while warm with powdered sugar icing.

    Serve warm or at room temperature.
