This is the very first coffeecake I made when I was learning to bake! That was over 40 years ago and it still impresses my guests.

Ingredients

  • CAKE

  • 1 c
    sugar
  • 4
    eggs
  • 1 c
    canola oil
  • 2 c
    flour
  • 1 Tbsp
    plus 2 teaspoons baking powder
  • 1 tsp
    salt
  • 1/2 tsp
    almond extract
  • 1 tsp
    cinnamon
  • 1 can(s)
    cherry pie filling
  • POWDERED SUGAR GLAZE

  • 1 1/2 c
    powdered sugar
  • 2 tsp
    lemon juice
  • 1 Tbsp
    butter, softened
  • ·
    milk if needed

How to Make Cherry Coffeecake

Step-by-Step

  1. Cream together the sugar, eggs and oil.
  2. Add the remaining ingredients and mix well.
  3. Pour half of the batter into a greased and floured 9x13 pan.
  4. Put cherry pie filling (or any pie filling you prefer) on top of batter and sprinkle with cinnamon.
  5. Top with rest of the batter.
  6. Bake at 350 degrees for 30-40 minutes or until tests done.
  7. Mix glaze ingredients together until smooth.
  8. Glaze while warm with powdered sugar icing.

    Serve warm or at room temperature.
