cherry coffee cake
This is another of my all-time favorites and another specialty of my restaurant - a fruit-filled coffee cake. It's a personal favorite of mine and my guests. Each week I used a different fruit filling. Apple, apricot, pineapple, peach, rhubarb, strawberry peach... you name it, I did it. It's so good with your favorite cup of hot tea or coffee for breakfast, a snack, or dessert.

What we loved most about this cherry coffee cake recipe is that the filling can be changed to suit any need. We loved the slightly tart flavor of cherry pie filling added to this light, airy, moist coffee cake. It's sprinkled with a crumbly, buttery topping that has a bit of a crunch from the chopped nuts.

Ingredients
- COFFEE CAKE
- 1 cup granulated sugar
- 1 stick butter, do not use margarine
- 1 cup sour cream
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 can cherry pie filling, or your favorite filling (21 oz)
- TOPPING
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup pecans or walnuts (chopped)
- 1 teaspoon cinnamon or apple pie spice
- 3 tablespoons butter, not margarine
How To Make cherry coffee cake

Step 1Preheat oven to 325 degrees F. Grease a 13" X 9" pan. Mix 1 cup sugar and 1 stick of butter at medium speed with a mixer until creamed.

Step 2Add sour cream, eggs, and vanilla extract. Continue beating until mixed well.

Step 3Reduce speed to low. Add 2 cups flour, baking powder, baking soda, and salt.

Step 4Beat until well mixed.

Step 5Spread half of the batter in the bottom of the greased pan.

Step 6Spoon cherry pie filling over the batter.

Step 7Spoon the remaining batter over the cherry filling spreading carefully.

Step 8For the topping stir together the flour, sugar, nuts, and cinnamon.

Step 9Cut in the 3 Tbsp butter until it resembles coarse crumbs.

Step 10Sprinkle over the batter.

Step 11Bake at 325 degrees for 45 - 50 minutes until a toothpick comes out clean and the topping is golden brown.
