How To Make cherry coffee cake
-
Step 1Heat oven to 350 degrees F. Grease bottom & sides of 15 x 10 x 1" pan or 2 (9") square pans with shortening or cooking spray. In large bowl, stir all coffee cake ingredients except pie filling; beat vigorously with spoon 30 seconds.
-
Step 2Spread 2/3 of the batter (about 2 1/2 C) in 15 x 10" pan or 1/3 of the batter (about 1 1/4 C) in each square pan. Spread pie filling over batter (filling may not cover batter completely). Drop remaining batter by Tbsp onto pie filling.
-
Step 3Bake 20 - 25 minutes or until light brown. Meanwihle, in small bowl, stir glaze ingredients until smooth & thin enough to drizzle. Drizzle glaze over warm coffee cake. Serve warm or cool.
-
Step 4VARIATIONS: You can use just about any pie filling they make, but Cherry is my favorite! TO MAKE SMALLER COFFE CAKE: This recipe is easy to cut in 1/2. Use one 9" square pan. Use 2 eggs & substitute a 10 oz. jar of fruit preserves for the pie filling. Divide remaining ingredient amounts in 1/2.
