cherry chocolate cake (or cupcakes)

My brother gave me this recipe about 25 years ago and it is still a favorite. You can use a boxed cake mix or your own favorite homemade cake recipe.

Ingredients

  • 1 package chocolate cake mix (or your favorite homemade recipe)
  • 1 teaspoon almond extract
  • 1 can cherry pie filling
  • - eggs, water and oil called for on cake mix box (if using); (you may not need all of the water and oil called for on the box)
  • FROSTING
  • 1 cup granulated sugar
  • 5 tablespoons butter
  • 1/3 cup milk
  • 6 ounces chocolate chips

How To Make cherry chocolate cake (or cupcakes)

  • Step 1
    For the cake: Grease and flour a 9x13" pan. Beat the eggs and almond extract. Add the cake mix, water and oil (you may not need all of the water and oil, so I add a little at a time, because the cherry pie filling will add additional moisture). By hand, stir in cherry pie filling.
  • Step 2
    Pour batter into the prepared cake pan and bake for 30 minutes (or until done) at 350 degrees F. If making cupcakes, put paper baking cups into cupcake pan, fill each cup with batter and bake for approximately 20 minutes. Let cool and then spread with frosting.
  • Step 3
    To make Frosting: Heat/boil the sugar, butter and milk for 1 minute, stirring constantly. Remove from heat and add the chocolate pieces. With electric mixer, beat until of spreading consistency. Frost the cake (or cupcakes).
