Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup old-fashioned oatmeal
  • 1 tablespoon powdered sugar
  • 2 tablespoons butter, melted
  • 5 tablespoons orange juice, divided
  • 1 1/2 teaspoons vanilla extract or almond extract, divided
  • 1 - 8 oz packages reduced fat cream cheese
  • 1/2 cup nonfat vanilla yogurt (greek preferred)
  • 1/2 cup sugar
  • 1 large egg
  • 2 large egg whites

How To Make cheesecake squares - "diabetic friendly"

  • Step 1
    PREHEAT:Oven to 350 degrees F. COAT:9x9x2" baking dish with nonstick cooking spray. IN:A small mixing bowl, combine with fork: flour, oatmeal, powdered sugar, melted butter, 2 Tbsp. orange juice & 1/2 tsp vanilla or almond extract. PRESS:Into bottom of prepared pan. BAKE:10 minutes.

    IN:Medium mixing bowl, beat cream cheese, yogurt, and sugar, until creamy. ADD:Egg, egg whites, 3 Tbsp. orange juice, and 1 tsp vanilla or almond extract, until creamy.
  • Step 3
    POUR:Into partially baked crust. BAKE:40 minutes, until center is set. COOL: completely and refrigerate. CUT: Into squares. SERVE:With fresh berries. COVER: Leftovers and store in refrigerator.
