Made this recipe off hand because I couldn't find a good "mini-cheese cake" recipe. The mini-cheese cakes ended up more like muffins, less dense than traditional cheese cake. Taste similar to a danish.

Ingredients
- 8 ounces cream cheese
- 1 cup white sugar
- 1/2 teaspoon vanilla
- 4 - eggs
- 1/2 cup cake flour
- 12 - vanilla wafer cookies (like nilla wafers)
- 12 - stemless maraschino cherries
How To Make cheesecake muffins

Step 1Cream room temperature cream cheese and sugar.

Step 2Add eggs and vanilla, beat well.

Step 3Slowly add cake flour, beating well after each addition.

Step 4Lightly grease the inside of the cupcake baking cups with cooking spray (this makes the final muffin pull out of the paper a lot easier).

Step 5Place wafer cookies in the bottom of cupcake baking cups in a 12 muffin pan.

Step 6Spoon an even amount of the mixture into each cupcake cup.

Step 7Top each muffin with a maraschino cherry.

Step 8Cook until a fork comes out clean and edges are golden brown.
