Ingredients
- CRUST:
- 20 - golden double stuf oreos
- 1/4 cup butter, melted
- FILLING:
- 3 - 8 oz packages cream cheese, room temperature
- 2/3 cup sugar
- 2 tablespoons cornstarch
- 3 x large eggs
- 1 cup bananas, mashed (about 3)
- 1/2 cup whipping cream
- 1 tablespoon pure vanilla extract

Step 1Preheat oven to 350 degrees F.

Step 2Place cookies in a blender; pulse until finely crushed. Add butter; pulse until blended. Press crumb mixture onto bottom of 10" springform pan; refrigerate.

Step 3Beat cream cheese in large bowl with electric mixer at medium speed until creamy. Add sugar & cornstarch; beat until blended. Add eggs, one at a time, beating well after each addition. Beat in bananas, whipping cream & vanilla. Pour cream cheese mixture into prepared crust. Place pan on cookie sheet & bake 15 minutes.

Step 4Reduce oven temperature to 200 degrees F. & continue baking 75 minutes or until center is almost set. Loosen edge of cheesecake; cool completely on wire rack before removing rim of pan. Refrigerate cheesecake, uncovered, at least 8 hours or overnight.

Step 5Allow cheesecake to stand at room temperature 15 minutes before serving.
