This recipe came out of an idea from a cheese tart recipe,tried and true..You can use any topping for the occasion..My Daughter loves cup cakes and so do my Grand kids..so this was created for them.:-)
1preheat oven 350
put 10 paper liners in a muffin pan
lay 1 vanilla wafer flat side down
2whip cream cheese till fluffy and then add sugar,beat,add eggs one at a time..then vanilla
3pour in muffin pan till it reaches almost top of edge of pan..not the paper; as some are higher than others.
bake for 22 min..when cool they will sink slightly...
use any pie filling or topping..you can also; freeze plain and then they are ready any time!(the wafer makes like a gram crust for the cup cake]
