Before I retired, I was a banker and during the Holidays, my customers always brought me wonderful gift. One of my favorites was Mrs. Crenshaw who made this for me every year. Before I retired, she gave me the recipe and here it is..The icing is a lot like the one I use for my dreamsicle cake...You will love this recipe

Ingredients

  • 1 box
    yellow, butter cake mix
  • 3/4 c
    vegetable oil
  • 1 can(s)
    mandarin oranges including juice
  • 1 c
    chopped pecans
  • 4 large
    eggs
  • FROSTING

  • 1 c
    confectioners' sugar
  • 1 can(s)
    crushed pineapple, drained
  • 1 c
    sour cream
  • 1 c
    whipped topping

How to Make Celestial Snow Cake

Step-by-Step

  1. Preheat oven to 350 degrees. Lightly grease and flour 3 (8 inch cake pans. Combine all ingredients and blend until moistened. Beat on medium speed for 4 minutes. Divide evenly into the 3 pans and bake for 20 to 25 minutes. Let cool on baking racks completely.
  2. Frosting: Mix all ingredients well and frost between layers and top and sides. Refrigerate.
