My friend from work, who is orginally from the Philippines, brings this to our social gatherings. It is so delicious! I begged her for the recipe and now I am sharing it with you.

Ingredients

  • 2 cups peeled, grated yuca/cassava
  • 2 - eggs, beaten
  • 1 can (12 ounce) evaporated milk
  • 1 can (14 ounce) sweetened condensed milk
  • 1 can (14 ounce) coconut milk

How To Make cassava cake

  • Step 1
    Preheat an oven to 350 degrees F (175 degrees C).
  • Step 2
    Stir the yuca, eggs, evaporated milk, sweetened condensed milk, and coconut milk together in a bowl until thoroughly combined; pour into a baking dish.
  • Step 3
    Bake in the preheated oven for 1 hour. Switch the oven's broiler on and bake under the broiler until the top of the cake is browned, 2 to 3 minutes. Cool completely in refrigerator before serving.
