We love this cake. The problem with this cake you walk by and cut apiece and pop it in your mouth all day long. It's great to for special occasions as well as big crowds. I make it just for us because we love it

Ingredients
- 4 - eggs
- 1 cup vegetable oil
- 2 cups sugar
- 2 cups all purpose flour
- 2 teaspoons baking soda
- 1/4 teaspoon baking powderl
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 3 cups shredded carrots
- 2/3 cup walnuts or pecans
- FROSTING
- 1 package 8oz cream cheese softened
- 1/2 - butter or margarine softened
- 1 teaspoon vanilla extract
- 4 cups confectioners' sugar
- 2/3 cup chopped nuts
How To Make carrot sheet cake

Step 1In a mixing bowl, beat eggs, oil and sugar until smooth. Combine flour, baking soda, baking powder, cinnamon, and salt;add to egg mixture and beat well. Stir in carrots and walnuts. Pour into a greased 15-in x10 in x1in. Baking pan. Bake at 350 for 35min.or until a toothpick inserted near the center comes out clean. Cool on a rack. For frosting, beat the creamy cheese, butter, and vanilla in a mixing bowl until smooth;beat in sugar. Spread over cake. Sprinkle with nuts. (I mix some nuts in the frosting also) NOTE: IT TAKES 1/2CUPS BUTTER FOR FROSTING. (wouldn't let me post it)
