This is an exremely moist carrot cake that doesn't require any frosting to make it delicious.

Ingredients

eggs
2 c
sugar
1 1/2 c
vegetable oil
3 c
all purpose flour
2 tsp
soda
1 tsp
salt
2 tsp
ground cinnamon
1 1/2 c
grated carrots
1 c
chopped nuts
1 can(s)
20 oz can of crushed pineapple well drained
2 tsp
vanilla extract

How to Make Carrot Pound Cake

Step-by-Step

  • 1Combine eggs, sugar and oil in a large mixing bowl; beat well.
  • 2Gradually beat in flour, soda, salt and cinnamon.
  • 3Stir in carrots, nuts, pineapple and vanilla.
  • 4Pour into greased and floured 10 inch tube pan.
  • 5Bake at 350 degrees for 1 hr and 15 minutes.
