This is an exremely moist carrot cake that doesn't require any frosting to make it delicious.

Ingredients

  • 3 large eggs
  • 2 cups sugar
  • 1 1/2 cups vegetable oil
  • 3 cups all purpose flour
  • 2 teaspoons soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 1/2 cups grated carrots
  • 1 cup chopped nuts
  • 1 can 20 oz can of crushed pineapple well drained
  • 2 teaspoons vanilla extract

How To Make carrot pound cake

  • Step 1
    Combine eggs, sugar and oil in a large mixing bowl; beat well.
  • Step 2
    Gradually beat in flour, soda, salt and cinnamon.
  • Step 3
    Stir in carrots, nuts, pineapple and vanilla.
  • Step 4
    Pour into greased and floured 10 inch tube pan.
  • Step 5
    Bake at 350 degrees for 1 hr and 15 minutes.
