Ingredients
- 3 - eggs
- 1 1/4 cups wesson oil
- 2 teaspoons soda
- 2 teaspoons cinnamon
- 1 cup chopped pecans
- 2 teaspoons vanilla
- 2 cups sugar
- 3 cups cake flour
- 1 teaspoon salt
- 1 1/2 cups grated carrots
- 1 - (20 ounce) can crushed pineapple well drained
How To Make carrot pineapple cake

Step 1Combine eggs sugar and oil and beat well. Sift flour soda salt & cinnamon; add to sugar mixture and beat well. Stir in carrots, pecans,pineapple & vanilla.

Step 2Pour into a greased and lightly floured 10-inch tube pan. and bake at 350 degrees for 1 hr & 15 mins or until cake tests done. Cool in pan for 10 mins. Remove from pan and let cool completely. Serve plain or with butter cream frosting, if desired.
