Ingredients

  • 3 - eggs
  • 1 1/4 cups wesson oil
  • 2 teaspoons soda
  • 2 teaspoons cinnamon
  • 1 cup chopped pecans
  • 2 teaspoons vanilla
  • 2 cups sugar
  • 3 cups cake flour
  • 1 teaspoon salt
  • 1 1/2 cups grated carrots
  • 1 - (20 ounce) can crushed pineapple well drained

How To Make carrot pineapple cake

  • Step 1
    Combine eggs sugar and oil and beat well. Sift flour soda salt & cinnamon; add to sugar mixture and beat well. Stir in carrots, pecans,pineapple & vanilla.
  • Step 2
    Pour into a greased and lightly floured 10-inch tube pan. and bake at 350 degrees for 1 hr & 15 mins or until cake tests done. Cool in pan for 10 mins. Remove from pan and let cool completely. Serve plain or with butter cream frosting, if desired.
