Ingredients

  • 3
    eggs
  • 1 1/4 c
    wesson oil
  • 2 tsp
    soda
  • 2 tsp
    cinnamon
  • 1 c
    chopped pecans
  • 2 tsp
    vanilla
  • 2 c
    sugar
  • 3 c
    cake flour
  • 1 tsp
    salt
  • 1 1/2 c
    grated carrots
  • 1
    (20 ounce) can crushed pineapple well drained

How to Make Carrot Pineapple Cake

Step-by-Step

  1. Combine eggs sugar and oil and beat well. Sift flour soda salt & cinnamon; add to sugar mixture and beat well. Stir in carrots, pecans,pineapple & vanilla.
  2. Pour into a greased and lightly floured 10-inch tube pan. and bake at 350 degrees for 1 hr & 15 mins or until cake tests done. Cool in pan for 10 mins. Remove from pan and let cool completely. Serve plain or with butter cream frosting, if desired.
