- - 1 3/4 cups cake flour
- - 1 tsp cinnamon
- - 1 tsp soda
- - 1/2 tsp salt
- - 3/4 cups salad oil
- - 2 eggs
- - 1 cup sugar
- - 1 cup grated carrots
- - 1 cup chopped pecans
How To Make carrot pecan coffee cake

Step 1Combine cinnamon soda salt flour and set aside. Combine oil sugar eggs and beat until well blended.

Step 2Add dry ingredients and mix just until blended. Fold in carrots and pecans and spoon batter into a greased and floured loaf pan; bake at 350 degrees for 1 hour and 25 minutes or until coffee tests done. Cool in pan for 10 minutes and then remove from pan and cool completely.
