Carrot-Pecan Cake

·2 cups grated carrots

ORANGE GLAZE

·1/4 c cornstarch
-
·2 tbsps butter
-
·1 c sugar
-
·2 tbsps grated orange peel

·1 c fresh orange juice

·1/2 tsp salt

ORANGE GLAZE DIRECTIONS

·combine sugar and cornstarch in saucepan; add juice slowly and stir until smooth. cook over low heat until thick and glossy. cool and spread over carrot pecan cake.
How to Make Carrot-Pecan Cake
- Combine oil and sugar and mix well. Sift all dry ingredients together and beat into oil and sugar mixture alternately with the eggs, beating well after each addition. Add pecans
- Pour a lightly greased tube pan. Bake at 325 degrees for 1 hr and 10 mins. Cool in pan. Spread Orange Glaze over the cake if desired.
