1 1/4 cups salad oil
2 cups flour
1 tsp soda
4 eggs
1 cup finely chopped pecans
2 cups sugar
2 tsp baking powder
2 cups grated carrots
2 tsp cinnamon


1/4 c cornstarch
2 tbsps butter
1 c sugar
2 tbsps grated orange peel
1 c fresh orange juice
1/2 tsp salt


combine sugar and cornstarch in saucepan; add juice slowly and stir until smooth. cook over low heat until thick and glossy. cool and spread over carrot pecan cake.

How to Make Carrot-Pecan Cake


  • 1Combine oil and sugar and mix well. Sift all dry ingredients together and beat into oil and sugar mixture alternately with the eggs, beating well after each addition. Add pecans
  • 2Pour a lightly greased tube pan. Bake at 325 degrees for 1 hr and 10 mins. Cool in pan. Spread Orange Glaze over the cake if desired.
