Ingredients
- - 1 1/4 cups salad oil
- - 2 cups flour
- - 1 tsp soda
- - 4 eggs
- - 1 cup finely chopped pecans
- - 2 cups sugar
- - 2 tsp baking powder
- - 2 cups grated carrots
- - 2 tsp cinnamon
- ORANGE GLAZE
- - 1/4 c cornstarch
- - 2 tbsps butter
- - 1 c sugar
- - 2 tbsps grated orange peel
- - 1 c fresh orange juice
- - 1/2 tsp salt
- ORANGE GLAZE DIRECTIONS
- - combine sugar and cornstarch in saucepan; add juice slowly and stir until smooth. cook over low heat until thick and glossy. cool and spread over carrot pecan cake.

Step 1Combine oil and sugar and mix well. Sift all dry ingredients together and beat into oil and sugar mixture alternately with the eggs, beating well after each addition. Add pecans

Step 2Pour a lightly greased tube pan. Bake at 325 degrees for 1 hr and 10 mins. Cool in pan. Spread Orange Glaze over the cake if desired.
