carrot pecan cake for the holidays
Christmas seems to be the time for baking beautiful deserts. Here is another recipe for your holiday to share, with family and friends. A few years back I made one for the club and it was auctioned off for charity... Was I surprised when it sold for $35.00 !!!! Nancy 11/29/12

Ingredients
- 1-1/2 cup sifted cake flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup finely chopped carrots
- 1/2 cup orange marmalade
- 1/2 cup chopped pecans
- 1 cup sugar
- 2 - eggs
- 2/3 cup melted crisco
How To Make carrot pecan cake for the holidays

Step 1Pre-heat oven to 350F. Sift together flour,baking soda,baking powder,salt and spices. Add the remaining ingredients,blend well. Spread batter in a greased, fluted 2 quart baking mold, or a bundt pan. Bake 40-50 minutes. Cool 10 minutes in pan. Invert on to a wire rack to cool completely. Glaze and decorate as desired.

Step 2Conf. glaze: 1Tabl. milkor light cream 1 cup sifted conf. sugar 1/2 teaspoon vanilla Combine all ingredients, blend well. Top with cherries. Foto and recipe was clipped from a magazine many years ago. Maybe the 70's ?
