Ingredients
- FOR THE CAKE:
- 1 box carrot cake mix
- 1 can (15 ounces) mandarin oranges with juice
- 2/3 cup cooking oil
- 4 large eggs, beaten
- 1/2 cup sour cream
- FOR THE TOPPING:
- 1 stick butter, softened
- 1 cup granulated sugar
- 3/4 cup evaporated milk
- 1 teaspoon vanilla extract
- 1 cup sweetened coconut flakes
- 1 cup pecans, chopped
How To Make carrot-orange cake

Step 1for the cake: Heat oven to 350 degrees. Grease a 9x13 pan.

Step 2Mix the sour cream, oil, and eggs until creamy. Add the cake mix and oranges with the juice; blend until everything is mixed well.

Step 3Pour into cake pan. Bake at 350 degrees for 30 to 35 minutes, or until toothpick inserted in the middle comes out clean.

Step 4While it is baking, prepare your topping. As soon as you take the cake out of the oven, spread the topping over it.

Step 5for the topping: In a medium saucepan, heat the butter, sugar and milk to a low boil. Let it cook for 10 minutes, stirring constantly.

Step 6Take off the burner and add the vanilla, coconut and chopped nuts. Spread over cake as soon as you take it out of the oven.
