Add a little extra to your carrot cake. It's quick and easy using a box mix, but taste like it was made from scratch.

Ingredients For carrot-orange cake

  • FOR THE CAKE:
  • 1 box
    carrot cake mix
  • 1 can
    (15 ounces) mandarin oranges with juice
  • 2/3 c
    cooking oil
  • 4 lg
    eggs, beaten
  • 1/2 c
    sour cream
  • FOR THE TOPPING:
  • 1 stick
    butter, softened
  • 1 c
    granulated sugar
  • 3/4 c
    evaporated milk
  • 1 tsp
    vanilla extract
  • 1 c
    sweetened coconut flakes
  • 1 c
    pecans, chopped

How To Make carrot-orange cake

    for the cake: Heat oven to 350 degrees. Grease a 9x13 pan.

    Mix the sour cream, oil, and eggs until creamy. Add the cake mix and oranges with the juice; blend until everything is mixed well.

    Pour into cake pan. Bake at 350 degrees for 30 to 35 minutes, or until toothpick inserted in the middle comes out clean.

    While it is baking, prepare your topping. As soon as you take the cake out of the oven, spread the topping over it.

    for the topping: In a medium saucepan, heat the butter, sugar and milk to a low boil. Let it cook for 10 minutes, stirring constantly.

    Take off the burner and add the vanilla, coconut and chopped nuts. Spread over cake as soon as you take it out of the oven.
