  • 2 stick
    butter softened
  • 1 tsp
  • 1 Tbsp
    grated orange rind
  • 3 tsp
    baking powder
  • 3 c
  • 1 1/2 c
    grated carrots
  • 2/3 c
    chopped pecans
  • 2 c
  • 1/2 tsp
  • 4
  • 1/2 tsp
  • 1/3 c
    fresh orange juice

How to Make Carrot-Orange Cake # 2


  1. Preheat oven to 350 degrees. Grease and flour tube pan. Cream butter and sugar. Add spices and orange rind. Beat eggs well in a seperate bowl. Add to butter and sugar.
  2. Sift flour, salt and baking powder and to the batter alternately with the orange juice.
  3. Fold in carrots and pecans. Bake 1 hr or until tests done. Cool and turn out. Dust confectioners sugar, if desired, or spread with cream cheese frosting.
