Ingredients

  • 2 sticks butter softened
  • 1 teaspoon cinnamon
  • 1 tablespoon grated orange rind
  • 3 teaspoons baking powder
  • 3 cups flour
  • 1 1/2 cups grated carrots
  • 2/3 cup chopped pecans
  • 2 cups sugar
  • 1/2 teaspoon nutmeg
  • 4 - eggs
  • 1/2 teaspoon salt
  • 1/3 cup fresh orange juice

How To Make carrot-orange cake # 2

  • Step 1
    Preheat oven to 350 degrees. Grease and flour tube pan. Cream butter and sugar. Add spices and orange rind. Beat eggs well in a seperate bowl. Add to butter and sugar.
  • Step 2
    Sift flour, salt and baking powder and to the batter alternately with the orange juice.
  • Step 3
    Fold in carrots and pecans. Bake 1 hr or until tests done. Cool and turn out. Dust confectioners sugar, if desired, or spread with cream cheese frosting.
