Ingredients
- 2 sticks butter softened
- 1 teaspoon cinnamon
- 1 tablespoon grated orange rind
- 3 teaspoons baking powder
- 3 cups flour
- 1 1/2 cups grated carrots
- 2/3 cup chopped pecans
- 2 cups sugar
- 1/2 teaspoon nutmeg
- 4 - eggs
- 1/2 teaspoon salt
- 1/3 cup fresh orange juice

Step 1Preheat oven to 350 degrees. Grease and flour tube pan. Cream butter and sugar. Add spices and orange rind. Beat eggs well in a seperate bowl. Add to butter and sugar.

Step 2Sift flour, salt and baking powder and to the batter alternately with the orange juice.

Step 3Fold in carrots and pecans. Bake 1 hr or until tests done. Cool and turn out. Dust confectioners sugar, if desired, or spread with cream cheese frosting.
