Ingredients

  • 1 cup melted butter
  • 4 - eggs
  • 2 cups flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon lemon extract
  • 1 1/2 teaspoons lemon extract
  • 1 1/4 cups sugar
  • 1 cup cooked mashed carrots
  • 1 1/2 teaspoons vanila extract
  • 2 1/4 cups confectioners sugar
  • 1/4 cup milk

How To Make carrot lemon cakes

  • Step 1
    Cream butter and sugar well add eggs one at a time beating well aftereach addition. Add carrots flour and baking powder beat 1 min. Stir in vanilla and 3/4 tsp lemon extract. Spoon into greased 15 x 10 x 1-inch jellyroll pan, spreading to edges. Bake at 350 degrees for 25 mins. Cool
  • Step 2
    Combine confectioners sugar, milk,and 1 1/2 tsps lemon extract. Stir until smooth. Pour glaze over cooled cake let stand until glaze is firm. Cut into squares.
