1Cream butter and sugar well add eggs one at a time beating well aftereach addition. Add carrots flour and baking powder beat 1 min. Stir in vanilla and 3/4 tsp lemon extract. Spoon into greased 15 x 10 x 1-inch jellyroll pan, spreading to edges. Bake at 350 degrees for 25 mins. Cool
2Combine confectioners sugar, milk,and 1 1/2 tsps lemon extract. Stir until smooth. Pour glaze over cooled cake let stand until glaze is firm. Cut into squares.
