Ingredients
- - 2 c sugar
- - 1 1/2 c salad oil
- - 1 tsp salt
- - 3 tsp cinnamon
- - 2 tsp vanilla extract
- - 4 eggs
- - 2 tsp baking soda
- - 2 c sifted flour
- - 3 c carrots finely grated
- CREAM CHEESE ICING
- 1 stick butter
- 8 ounces pkg cream cheese
- 1 box confectioners sugar
- 1 cup chopped pecans
- 1 teaspoon vanilla
- - pinch of salt
- - beat together softened butter and cream cheese until well blended. add sugar and vanilla and blend well. fold in pecans. spread between layers and on top and sides of carrot layers.
How To Make carrot layer cake

Step 1Cream oil and sugar until light & fluffy. Add eggs one at a time beating well after each addition. Blend in vanilla. Sift dry ingredients together and add to creamed mixture, blending well fold in carrots.

Step 2Bake in 3 or 4 greased cake pans. Bake at 325 degrees for around 40 mins. Cool and then spread with Cream Cheese Icing.
