I got this off a mayonnaise jar about 25 years ago. It is very good and not as greasy as one made with oil.

Ingredients
- 2 cups unsifted flour
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger1/2
- 1/2 teaspoon salt
- 3 large eggs
- 1 1/2 cups sugar
- 3/4 cup real mayonnaise
- 1- 8oz cans crushed pineapple with juice
- 2 cups coarsely grated carrots
- 1 cup coarsely chopped walnuts
- 3/4 cup raisens or dried cranberries
How To Make carrot cake

Step 1Grease and flour 2- 9" round baking pans. Preheat oven to 350*

Step 2in bowl sift together first 5 ingredients. Set aside.

Step 3In mixer bowl, beat together next 4 ingredients. Gradually beat in flour mixture.

Step 4With a spoon mix in carrots, nuts and dried fruit.

Step 5Turn into prepared pans bake for 30-35 mins or until a skewer comes out clean. Let cool 10 mins and turn out on racks to cool completely.

Step 6beat together 16 oz whipped topping and 1 8oz block of cream cheese softened. frost cake
