- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup applesauce
- 1 cup brown sugar
- 3 - egg whites
- 1 - orange, grated rind only
- 1 - lemon, juice only
- 3 - carrots, shredded
- 1 cup raisins
- GLAZE INGREDIENTS
- 2 cups powdered sugar
- 4 tablespoons orange juice
- 1 teaspoon lemon juice
- 1 teaspoon orange rind, grated
How To Make carrot cake with orange glaze

Step 1Preheat oven to 350 degrees.

Step 2Lightly grease bundt-style pan or 10\" springform pan with center hole.

Step 3Combine flour, baking soda, baking powder, cinnamon and salt: set aside.

Step 4Beat together applesauce, sugars, egg whites, orange rind and juice; blend in flour mixture with mixer at medium speed only until smooth - Do not over beat.

Step 5Stir in carrots and raisins; pour batter into prepared pan and bake 50 to 60 minutes or until a knife inserted near center comes out clean.

Step 6Remove cake from pan, or if using spring form, remove sides of pan and put cake on wire rack to cool completely.

Step 7Orange Glaze: Combine sugar, orange juice, lemon juice and orange rind; stir thoroughly to blend.

Step 8Spoon glaze over cooled cake and serve.
