Ingredients
- 2 cups flour
- 2 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1 cup sugar
- 1 cup oil
- 4 - beaten eggs
- 2 cups grated carrot
- 1 1/4 cups drained pineapple
- ICING
- 8 ounces cream cheese
- 1/2 cup butter
- 2 cups icing sugar
- 1 teaspoon vanilla
How To Make carrot cake with cream cheese icing

Step 1Mix flour, baking soda, baking powder, salt and cinnamon. Add sugar, oil and eggs. Mix. Add carrot and pineapple. Mix well.

Step 2Pour into a buttered and floured pan and bake for 55 minutes at 350 degrees. Cool on wire wrack.

Step 3Icing Sugar: Place cream cheese, butter, icing sugar and vanilla in a bowl and cream until smooth. Spread over cooled cake.
