Ingredients

  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 cup sugar
  • 1 cup oil
  • 4 - beaten eggs
  • 2 cups grated carrot
  • 1 1/4 cups drained pineapple
  • ICING
  • 8 ounces cream cheese
  • 1/2 cup butter
  • 2 cups icing sugar
  • 1 teaspoon vanilla

How To Make carrot cake with cream cheese icing

  • Step 1
    Mix flour, baking soda, baking powder, salt and cinnamon. Add sugar, oil and eggs. Mix. Add carrot and pineapple. Mix well.
  • Step 2
    Pour into a buttered and floured pan and bake for 55 minutes at 350 degrees. Cool on wire wrack.
  • Step 3
    Icing Sugar: Place cream cheese, butter, icing sugar and vanilla in a bowl and cream until smooth. Spread over cooled cake.
