An easy, moist carrot cake.

baking soda
1 1/2 tsp
baking powder
1 tsp
2 tsp
1 c
1 c
beaten eggs
2 c
grated carrot
1 1/4 c
drained pineapple


8 oz
cream cheese
1/2 c
2 c
icing sugar
1 tsp

How to Make Carrot Cake with Cream Cheese Icing


  • 1Mix flour, baking soda, baking powder, salt and cinnamon.

    Add sugar, oil and eggs. Mix.

    Add carrot and pineapple. Mix well.
  • 2Pour into a buttered and floured pan and bake for 55 minutes at 350 degrees.

    Cool on wire wrack.
  • 3Icing Sugar:

    Place cream cheese, butter, icing sugar and vanilla in a bowl and cream until smooth.

    Spread over cooled cake.
