This is the moistest, yummiest carrot cake ever! Has been my favorite ever since my great-grandma Fronie made it. Although, I know it will never quite taste the same as hers, it's pretty darn good. Nuts are optional, however, I never add them.

Ingredients

2 c
sugar
1 1/2 c
vegetable oil
4
eggs
2 tsp
baking soda
2 tsp
baking powder
2 c
flour
2 tsp
cinnamon
1 tsp
salt
1 c
walnuts, chopped (optional)
3 c
carrots, grated
1 lb
powdered sugar
8 oz
cream cheese
1/2 stick
butter or oleo
1 tsp
vanilla

How to Make Carrot Cake with Cream Cheese Frosting

Step-by-Step

  • 1Preheat oven to 350. Grease 9x13 cake pan.
  • 2Cream together sugar, oil, eggs. Combine dry ingredients and sift. Add to sugar mixture. Fold in carrots. Add nuts if using.
  • 3Spread into pan and bake for about 45 minutes to 1 hour, or until toothpick inserted in middle comes out clean. Do not over bake !
  • 4To make frosting: Combine together powdered sugar, cream cheese, butter and vanilla. Beat on medium speed about 2 minutes.
  • 5Cool cake completely and spread with frosting.
