carrot cake with cream cheese frosting

This is the moistest, yummiest carrot cake ever! Has been my favorite ever since my great-grandma Fronie made it. Although, I know it will never quite taste the same as hers, it's pretty darn good. Nuts are optional, however, I never add them.

- 2 cups sugar
- 1 1/2 cups vegetable oil
- 4 - eggs
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 2 cups flour
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1 cup walnuts, chopped (optional)
- 3 cups carrots, grated
- 1 pound powdered sugar
- 8 ounces cream cheese
- 1/2 stick butter or oleo
- 1 teaspoon vanilla
How To Make carrot cake with cream cheese frosting

Step 1Preheat oven to 350. Grease 9x13 cake pan.

Step 2Cream together sugar, oil, eggs. Combine dry ingredients and sift. Add to sugar mixture. Fold in carrots. Add nuts if using.

Step 3Spread into pan and bake for about 45 minutes to 1 hour, or until toothpick inserted in middle comes out clean. Do not over bake !

Step 4To make frosting: Combine together powdered sugar, cream cheese, butter and vanilla. Beat on medium speed about 2 minutes.

Step 5Cool cake completely and spread with frosting.
