1Combine the dry ingredients and in another bowl, stir together the eggs, carrots and the oil. Add the carrot mixture to the dry ingredients and still until combined. Pour into 2 prepared 8 inch round cake pans and place in a preheated 350 degree oven.
2Bake for 30-35 minutes and cool in pans for 10 minutes then remove to rack and cook completely while making frosting
3For the frosting, mix together the cheese and butter and slowly mix in the powdered sugar and vanilla. This will adequately frost the cake attractively.
