Ingredients
- 4 - eggs
- 2 cups all purpose flour
- 2 cups sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 1/2 teaspoons baking soda
- 1 3/4 cups vegitable oil
- 3 cups packed, shredded carrots
- CREAM CHEESE FROSTING
- 8 ounces room temperature cream cheese (do not use the softened)
- 1/2 cup room temperature butter
- 6 cups powdered sugar
- 1 1/4 teaspoons pure vanilla extract
How To Make carrot cake with cream cheese frosting

Step 1Combine the dry ingredients and in another bowl, stir together the eggs, carrots and the oil. Add the carrot mixture to the dry ingredients and still until combined. Pour into 2 prepared 8 inch round cake pans and place in a preheated 350 degree oven.

Step 2Bake for 30-35 minutes and cool in pans for 10 minutes then remove to rack and cook completely while making frosting

Step 3For the frosting, mix together the cheese and butter and slowly mix in the powdered sugar and vanilla. This will adequately frost the cake attractively.
