- 2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 3 teaspoons cinnamon
- 1 1/2 cups vegetable oil
- 4 large eggs
- 3 cups grated carrots
- 1 cup chopped nuts-(optional)
- 1 teaspoon vanilla

Step 1For the cake:preheat oven to 350. sift together sugar,flour,soda,and cinnamon in a large bowl. Stir in the oil.Add eggs,one at a time,mixing well after each addition. Add carrot,nuts,and vanilla,mixing thoroughly. Pour into a greased,floured 13"x9"cake pan. For a more elegant layer cake,use 2-8" round cake pans(some batter will be left over---make cupcakes.

Step 2bake for 30 minutes.Cool in pan.Spread with cream cheese frosting.--For layer cake,remove layers from pan and frost between layers and on top.

Step 3For the icing: beat together cream cheese and butter until smooth.Blend in vanilla. Sift powdered sugar and gradually beat into cream cheese mixture.
