How to Make Carrot Cake with Cream Cheese Frosting
- For the cake:preheat oven to 350.
sift together sugar,flour,soda,and cinnamon in a large bowl.
Stir in the oil.Add eggs,one at a time,mixing well after each addition.
Add carrot,nuts,and vanilla,mixing thoroughly.
Pour into a greased,floured 13"x9"cake pan.
For a more elegant layer cake,use 2-8" round cake pans(some batter will be left over---make cupcakes.
- bake for 30 minutes.Cool in pan.Spread with cream cheese frosting.--For layer cake,remove layers from pan and frost between layers and on top.
- For the icing: beat together cream cheese and butter until smooth.Blend in vanilla. Sift powdered sugar and gradually beat into cream cheese mixture.
