Ingredients
- 2 cups flour
- 1-1/2 cup sugar
- 1/2 cup light brown sugar
- 1 cup pecans, finely chopped
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon plus 1 tsp. cinnamon
- 1/2 teaspoon allspice
- 1/4 teaspoon nutmeg
- 4 large eggs
- 3/4 cup oil
- 1 teaspoon vanilla
- 2 teaspoons orange extract
- 1/2 cup vanilla greek yogurt
- 2-1/2 cup grated carrots
- CREAM CHEESE FILLING
- 1 {8 ounces) cream cheese, softened
- 1/2 cup sugar
- 1 large egg
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla
- 3 tablespoons flour
- GLAZE
- 1 (4 ounces) cream cheese, softened
- 2 tablespoons butter, softened
- 2 tablespoons orange juice
- 2 teaspoons lemon juice
- 1 teaspoon orange extract
- 1/2 teaspoon vanilla
- 2 cups sifted powdered sugar
How To Make carrot cake with cream cheese filling and glaze

Step 1Cream cheese filling: Beat the cream cheese and sugar until light. Beat in remaining filling ingredients until smooth. Set aside.

Step 2In a large bowl, mix all of the dry ingredients together. In a separate bowl, gently whisk eggs, then stir in remaining wet ingredients just to combine. Do not overmix.

Step 3Stir wet ingredients into dry ingredients just until moistened, then stir grated carrots until evenly combined.

Step 4Spoon 3 cups batter into a greased and floured bundt pan. Spoon cream cheese filling over batter and smooth, but do not touch sides of pan. Top with remaining batter.

Step 5Bake at 350 degrees for 45 minutes, cover with foil, then reduce heat to 325 degrees and bake for 25 to 30 minutes more. Cool in the pan for 10 minutes, then transfer to wire rack to cool completely.

Step 6Using an electric mixer, cream together all of the glaze ingredients, except powdered sugar, on medium speed for 1 to 2 minutes or until completely smooth.

Step 7Add sifted powdered sugar and beat until smooth. Place the glaze in the refrigerator for 5 to 10 minutes before using.

Step 8When cake has cooled, drizzle glaze over cake.
