This carrot cake has been in my family for many years. My mother made it for me every year on my birthday. It is also my kids favorite. This is probably the most requested dish that I bring to reunions, holidays, and parties. Hope you enjoy!

Ingredients

3 - eggs
1 1/2 cups sugar
2 cups carrots, grated
1 cup pineapple, crushed
1 1/4 cups oil
1/2 cup coconut
1/2 cup walnuts, chopped
2 teaspoons soda
2 teaspoons vanilla extract
1/2 teaspoon salt
3 cups flour

How To Make carrot cake with character

Step 1

Mix eggs, sugar, vanilla, pineapple and oil in a bowl. Set aside

Step 2

In another bowl, mix the remaining ingredients together, then add the wet mixture into the dry. Stir until just nicely blended.
Step 3

Pour into a greased and floured 11 X 14 cake pan. Bake at 350 degrees for 1 hour.
