~ carrot cake surprise ~ citrus frosting

I've made many of carrot cakes, but wanted to see what one would be like with chocolate chips. We loved it. Of course you can leave them out if you don't prefer. Would still be a great cake. We loved the frosting as well. Enjoy!

Ingredients

  • 1 1/4 cups sugar
  • 3/4 cup vegetable oil
  • 3 - eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon each - baking soda, baking powder, salt, cinnamon
  • 1/4 teaspoon nutmeg
  • almost - 2 cups shredded carrots
  • 1 cup each - chopped walnuts and chocolate chips
  • 1 cup crushed pineapple - undrained
  • FROSTING ~ CAN EASILY BE HALVED - I FROST AS I SERVE IT
  • 1 - 8 ounces softened, cream cheese
  • 1/4 cup softened, butter
  • 2 tablespoons each - orange juice & lemon juice
  • 5 - 6 cups confectioners' sugar

How To Make ~ carrot cake surprise ~ citrus frosting

  • Step 1
    Preheat oven to 350 degree F. Spray a 9 x 13 baking dish with non stick cooking spray. Set aside. In a large bowl, beat together sugar, oil, eggs and vanilla.
  • Step 2
    In another bowl, mix flour, salt, soda, baking powder and spices. Slowly beat in the flour mixture with the wet ingredients.
  • Step 3
    Fold in the pineapple, carrots, nuts and chocolate chips. Place in oven and bake for 40 - 45 minutes or until pick comes out clean. Cool on rack completely.
  • Step 4
    Make frosting: Beat butter and cream cheese until creamy. Slowly beat in the confectioners' sugar and juices. Add more juice if too thick or more sugar if too thin. I halved this recipe as I didn't want a lot of frosting.
  • Step 5
    Spread evenly onto cooled cake. Cut and enjoy!
