carrot cake hawaiian delight
This is not only a family favorite, but friends at work ask me to make it for every potluck. I think that's all they think I can make but it is scrumptious.

Ingredients
- 2 cups sugar
- 1 cup vegetable oil
- 3 - eggs
- 1 teaspoon soda
- 2 teaspoons cinnamon
- 1 3/4 cups crushed pineapple and a little juice
- 2 cups sifted flour
- 1/2 teaspoon salt
- 2 teaspoons vanilla
- 2 cups grated carrots, not organic or baby carrots

Step 1Mix together eggs, sugar and oil. Add flour, soda, salt, cinnamon and vanilla. Blend in pineapple and carrots. Bake in 13 x 9 pan @ 350 for 40-45 minutes. Frosting: Blend together 8 oz. cream cheese, 4 c. powdered sugar, 1/2 c. margarine and 2 tsp. vanilla Blend all together and frost cake after cool. Be sure to use regular cream cheese and margarine because if you use the lite versions, frosting will not set up.
