Finally found my mother's recipes. I was specifically looking for this one because it is my sister's favorite. I have made 3 cakes in 3 weeks...the whole family just loves it.

Ingredients

  • CAKE
  • 1 1/2 cups vegetable oil
  • 4 - eggs
  • 2 teaspoons cinnamon, ground
  • 1 cup chopped pecans
  • 2 cups sugar
  • 2 cups sifted self-rising flour
  • 3 cups shredded carrots
  • ICING (FOR A 3-LAYER CAKE- DOUBLE ICING)
  • 1 package cream cheese
  • 1 box confectioners sugar
  • 1 teaspoon vanilla extract

How To Make carrot cake

  • Step 1
    CAKE: Blend Oil & Sugar Add eggs, one at a time, beating after each addition Add Vanilla, Flour, Carrots & Pecans- Mix Well Bake @ 350 degrees until done
  • Step 2
    Icing: Mix together: Cream cheese (softened), Box Confectioners Sugar, Vanilla
