Finally found my mother's recipes. I was specifically looking for this one because it is my sister's favorite. I have made 3 cakes in 3 weeks...the whole family just loves it.

Ingredients
- CAKE
- 1 1/2 cups vegetable oil
- 4 - eggs
- 2 teaspoons cinnamon, ground
- 1 cup chopped pecans
- 2 cups sugar
- 2 cups sifted self-rising flour
- 3 cups shredded carrots
- ICING (FOR A 3-LAYER CAKE- DOUBLE ICING)
- 1 package cream cheese
- 1 box confectioners sugar
- 1 teaspoon vanilla extract

Step 1CAKE: Blend Oil & Sugar Add eggs, one at a time, beating after each addition Add Vanilla, Flour, Carrots & Pecans- Mix Well Bake @ 350 degrees until done

Step 2Icing: Mix together: Cream cheese (softened), Box Confectioners Sugar, Vanilla
